Sweet potatoes have always been one of my favorite side dishes. They are so versatile and perfect any time of year in my opinion. Not only are they my go-to potato option when I’m trying to eat slim and trim, but they are one of my favorite holiday side dishes. Every year during the holidays, I look forward to all those sweet cinnamon flavors of sweet potato casserole.
And last year, I was put in charge of it. And let’s just say, I may have added an extra cup of sugar on accident. I realized it as I went to put it in the oven, and there was no way I was starting over on the dish. I brought it to my sister’s house that day and told her she may want to put it on the dessert table. But no worries! It was sweet…but it was good too 🙂
But I’ve recently discovered how much I like sweet potatoes on the savory side too. They really are a blank canvas, and that’s what makes them so great! And putting potatoes in the crock pot has become my new thing. I had never tried a potato in a slow cooker until last year. Boy did that change things for me in the kitchen. I love that the slow cooker can cook anything from breakfast to dinner to dessert. It’s a working mom’s best friend for sure. My co-workers and I always talk about what new recipe we’ve tried in our crock pot. I can’t wait to share this one with them!
This recipe is quick, easy, and delicious. The hardest part about it is peeling the potatoes. After that, it’s literally throw it all in a bowl and stir. It doesn’t take long for those wonderful garlic Parmesan flavors to fill your home either! Hope you enjoy!
Parmesan Crock Pot Sweet Potatoes
Slow Cooker Parmesan Sweet Potatoes are packed full of garlic parmesan flavors and make a perfectly easy side dish for a weeknight dinner! Plus, they are even great for the holidays too!
Ingredients
- 3 large sweet potatoes
- 2 tbsp olive oil
- 1 1/2 tsp kosher salt
- 1 tbsp garlic paste
- 1/2 tsp garlic powder
- 1 tsp dried parsley
- 1/2 cup shredded parmesan cheese
- 4 tbsp butter, cubed
Instructions
- Cut sweet potatoes into large chunks.
- In a large bowl, mix sweet potatoes with all ingredients. Pour into a slow cooker. Cook on low for 6 to 7 hours.
- *Use a slow cooker liner for easy clean up!
