I’m back with another high protein and low-carb recipe idea for you guys! These Easy Ham and Onion Egg Bites are easy to make ahead for the week and a lot less money than Starbucks!! Plus, they are helping me meet my protein goals for the day.
You get to eat two of these egg bites for only 166 calories and 17 grams of protein! That’s a good ratio guys!! And they are only 5 grams of carbs!! Keeping this ratio in everything I eat is always my goal!
What do you need to make these Easy Ham and Onion Egg Bites?
- Low-Fat cottage cheese
- non-fat plain yogurt
- eggs
- thinly-sliced deli ham
- green onions
- kosher salt
- shredded Colby Jack cheese
- You’ll also need a blender. I love my Ninja!!
Tips for making this recipe:
- I spray my muffin tin really well.
- You can also use silicon egg molds.
- Place a casserole dish of water under the eggs in the oven while they bake. This helps them bake up perfectly.

Easy Ham and Onion Egg Bites
Easy Ham & Onion Egg Bites - A high-protein breakfast recipe idea that's easy to make-ahead and a lot cheaper than Starbucks!
Ingredients
- 6 large eggs
- 16 oz. low-fat cottage cheese
- 1/3 cup non-fat plain yogurt
- 3 oz. thinly sliced chopped ham
- 1/3 cup chopped green onions
- 1 tsp kosher salt
- 1/2 cup shredded Colby Jack cheese
Instructions
- Preheat oven to 400 degrees. Place a casserole dish filled with about 1/2 inch of water onto the bottom oven shelf.
- Add all ingredients except ham shredded cheese to a blender.
- Spray muffin tin really well with cooking oil spray. Fill each muffin a little over 3/4 full. You will need 2 muffin tins for this recipe to make 16 egg bites.
- Sprinkle each egg bite with ham and shredded cheese.
- Bake for 20-25 minutes or until egg bites begin to brown along edges.
- Remove from oven an allow them to cool before removing. I remove them to sit on a paper towel to collect extra moisture from baking.
- Can be stored in refrigerator for the week. Reheat for 30 seconds in the microwave.
Notes
You can also make mini muffin tin egg bites. These will bake up in about 15 - 18 minutes.
