Dr. Pepper Vanilla Float Cake Brownies – Fun brownies filled with the new Dr Pepper Vanilla Float® and topped with a rich Dr Pepper Vanilla Float® chocolate icing for a fun summer treat!!
Today it’s time for a fun treat with a little twist! I love desserts that have a little something unexpected in them. They are fun to make and fun to eat! There is just something about summertime that makes me want to enjoy little things like this.
Summertime is also time for making memories and having fun with my kiddos…
There they are…all my kiddos on the “famous” duck slide. Now if you are new to my blog, don’t be confused. No I do not have 4 babies all little like this! But I do have 4 babies. They just happen to be 8, 7, 3, and almost 1. For every kiddo, I’ve made it a tradition to take a photo on the duck slide at the waterpark when we are on vacation in Gulf Shores, Alabama.
I love looking back at all these fun moments. They grow so fast, and even though there are days I just get so exhausted, I want to soak in every moment of their precious childhood. One of my goals this summer is to create memorable moments. I consider myself one of the luckiest people in the world. I worked as a teacher for 9 years, and even though I loved teaching, I really wanted to stay home with my kids while they were little. And here I am getting to do that now!
I love looking back at old photos, and in case you didn’t know, I am a scrapbooker. I don’t have much time lately, but I love looking back at so many fun moments in my children’s lives and in my own childhood.
I have very fond memories of getting to enjoy “floats” as a child. My dad loved them, and therefore, so did I! Well now, Dr. Pepper® has a limited edition summer flavor, Dr Pepper Vanilla Float®. There’s nothing like certain tastes and smells that take you back to moments in time that you love to remember! You can find them at select Safeway and Albertson’s stores.
These Dr. Pepper Vanilla Float Cake Brownies are great to enjoy during all your summertime memory-making. My kids got totally excited when I told them I was adding Dr. Pepper to brownies. Mind-blown!
This recipe is really a cross between chocolate cake and a brownie. The Dr Pepper Vanilla Float® chocolate icing on top definitely makes them oh so good!
I made them in a 12 x 8 baking dish, however, you could totally make them in a 13 x 9 or even a 15 x 10. Just reduce your baking time.
Dr. Pepper Vanilla Float Cake Brownies
Ingredients
Brownies:
- 1/3 cup canola oil
- 1 3/4 cups sugar
- 1 egg
- 1 tsp vanilla
- 1 cup Dr Pepper Vanilla Float®
- 1/2 cup buttermilk (see note)
- 2 cups flour
- 1/2 cup cocoa powder
- 1 tsp baking soda
- 1/2 cup chocolate chips
- 3/4 cup chopped pecans
Icing:
- 6 tbsp butter
- 1/3 cup Dr Pepper Vanilla Float®
- 1/4 cup cocoa powder
- 16 oz. powdered sugar
- 1-2 tsp vanilla
Instructions
- Preheat oven to 350 or 325 if using glass baking dish. Spray 8 x 8 dish with non-stick spray.
- In a large bowl, beat oil, sugar, egg, and vanilla.
- In a smaller bowl, stir Dr Pepper Vanilla Float® and buttermilk together.
- In another smaller bowl, combine flour, cocoa powder, and baking soda.
- Alternate adding buttermilk mixture and flour mixture to the oil/egg/sugar mixture. Beat together after each addition.
- Stir in chocolate chips and pecans.
- Pour batter into greased baking dish.
- Bake for 30 minutes. If using a 15 x 10 pan, bake for 12 to 15 minutes.
- For icing, in a medium sauce pan, melt butter over medium heat. Add Dr Pepper Vanilla Float® and cocoa. Bring to a boil. Turn off heat and add powdered sugar and vanilla. Whisk until smooth.
Notes
*To make 1/2 cup buttermilk, add 1/2 tbsp of vinegar to a 1/2 cup milk. Stir and let sit for 5 minutes.
