One-Pot Beefy Broccoli Rice – A quick, easy, and hearty one-pot supper filled with ground beef, broccoli, rice and topped with cheese.
Update – This One-Pot Beefy Broccoli Rice originally posted in 2014. Those pictures needed some updating because this recipe is quick, easy, and delicious, so I’m reposting it for all our new readers!
I have a few older recipes on this blog that don’t get the TLC they really need. Some of my first recipes are my favorites, but let’s face it. I was totally learning food photography on the fly. I’m still by no means an expert, but I am much better and have better equipment.
I couldn’t stand the fact that you guys were missing out on this One-Pot Beefy Broccoli Rice because it is just the kind of recipe that you guys LOVE. It’s one pot and done in 30 minutes!! It’s the perfect weeknight dinner and great for school nights. It kind of reminds me of your love for this little recipe right HERE. Who’d thunk cabbage would be a hit? But the lovers of cabbage are apparently extreme.
But back to busy weeknights. One-pot dinners are winners in the fall! The fact that I’m talking about school nights kind of makes me want to cry a little. Can I just say this has been the best summer with my kids? They are growing up, and we have really relaxed!
Tips for Making One-Pot Beefy Broccoli Rice
- I only add a half-can of Rotel because I have a few picky eaters. Go ahead and add the whole can if you’d like.
- Use a non-stick pot for easy clean-up.
- There’s no need to cook your rice separately and have another pot to clean either. That, my friends, is a huge bonus! I use medium-grain rice. You may want to increase the cooking time for long grain or brown rice.
- Beef broth can be substituted for water with bouillon granules/cubes.
- I use different cheeses and whatever I have on hand. Colby Jack or Cheddar are usually my go-to cheeses for one-pot meals.
Been there quite often! You??
Don’t worry about that with this meal. Only ONE pot to clean! Whoop! Whoop!
One-Pot Beefy Broccoli Rice
Ingredients
- 2 lbs. ground beef (ground round or sirloin works great)
- 1 onion, chopped
- 1 clove garlic, finely chopped
- 1 tsp creole seasoning
- 3 cups warm water
- 2 tsp beef bouillon granules or 2 cubes
- 2 cups rice
- 1 lb. frozen cut broccoli
- 1/2 can mild Rotel
- 2 cups shredded cheddar cheese or Colby Jack
- Optional: fresh parsley
Instructions
- Brown beef with onions and garlic. Season with creole seasoning as you start to brown it.
- While meat is browning, mix warm water with bouillon granules and let sit.
- Once beef is browned and onions are clear, add bouillon mixture, rice, broccoli, and Rotel. Stir.
- Bring it to a boil and then cover and reduce heat to low.
- Cook for 20 minutes. Do not lift lid during this time. Stir and check to see if rice is done. If not, add a little more water, cover and cook a little longer.
- Taste and season a little more if you prefer.
- Top with cheese, cover, and let cheese melt. Serve with a little fresh parsley.
Notes

Hi Judith! Thanks for visiting!!
Sue says
By boiling the broccoli for 20 minutes with the other ingredients, doesn’t it turn very brown?
Jaren says
Hi Sue! The broccoli is not going to be bright green like it would if you were just steaming it, but it will not be brown. It’s going to be tender and cooked down like it is in a broccoli casserole. We love this one! Hope you enjoy and thanks for visiting!
Abby says
This looks pretty yummy. Do you use instant rice or other? Thanks
Jaren says
Hi Abby! I use medium-grain rice (not instant). Thanks for visiting!

Kat says
Looks delicious! Is the cooking process different if using fresh broccoli instead of frozen?
Thanks!
Jaren says
Hi Kat! It should be about the same for fresh. Thanks for visiting!!

Great, little meal. It was quick and delicious. I added salsa the next day and ate it with tostitos scoops.
I used cooked (rice from a previous meal) rice at the very end instead of cooking it altogether; it made the cooking time quicker. Unless you’re cooking with 93/7 beef, you need to drain that beef before adding the other ingredients. Lol. Unless clogged arteries are your kind of thing. This is definitely a recipe I’ll be adding to my notebook.

Shantelle says
New family favorite here! I saw the recipe this morning and made it for dinner tonight. Everyone loved it! I used fresh broccoli and instead of stirring it into the meat for cooking, I left it on top, put the lid on for the 20 minutes. We had bright green and beautifully cooked broccoli. Can’t wait to make it again!
Jaren says
Hi Shantelle! That’s awesome to hear! Love the fresh broccoli too 🙂 Thanks for visiting!
Donna says
This had a really good flavor but way too much rice causing it to be too think in my opinion. I followed the recipe as written but had to add a lot more broth. I will make it again but reduce rice.

Nancy says
Can this recipe be halved as written?
Jaren says
Hi Nancy! You sure can! I would still use 1/2 can of Rotel or diced tomatoes if you like them. Thanks for visiting!

Rachel Hardin says
Hi! I tried this with corn instead of broccoli! And it was amazing. I love the different flavors coming together. Thank you!!
Do you know how many calories are in one serving?
Jaren says
Yay, so glad you tried that Rachel!! I have other similar one-pot recipes you might like to try too. I have a more Mexican version with corn you may like as well. https://www.diaryofarecipecollector.com/one-pot-mexi-beef-corn-bake.html
This recipe is around 500 calories per serving and possibly less if you use a leaner meat. Personally, I use the My Fitness Pal app. It allows you to import any recipe you find online and get the nutrition facts.
Aliza says
Can you use fresh broccoli
Jaren says
Yes, you sure can!
Angela says
Made this tonight in my instant pot! It’s a hit! I wasn’t sure if it would come out in the IP but it worked great! I used all the same measurements as directed in the recipe. But I layered it without mixing in this order. Cooked ground beef on bottom. Then I sprinkled the rice on the meat mixture. Poured the “broth” over the rice. Then the rotel. Then put the broccoli on top. Don’t mix. Cook HP for 10 minutes. Then QR when done! Added cheese after it was plated! Thank you!!
Jaren says
Hi Angela!! Thanks for trying it in the IP! I love my IP, so I’m so glad this recipe worked in there too! Thanks for sharing!
Danielle Briggs says
This was amazing! Loved it so much I sent it to 20+ friends and relatives.
Jaren says
Great to hear that Danielle!
Terrica says
Hello, can I substitute diced tomatoes for rotel? I have picky eaters and tryin to get more vegetables in my kids diet, so when I came across this recipe, I had to try it and being a one pot meal is a plus!!
Jaren says
Hi Terrica! Yes, canned diced tomatoes would be fine! Enjoy!
Melanie says
Any suggestions on different seasonings to use if you don’t have creole seasoning on hand?
Jaren says
Hi Melanie, you can certainly use good old salt and pepper with a little bit of garlic powder and onion powder. Creole seasoning has a little touch of red pepper as well.
Nicki says
This was a winner! Even my husband said it had excellent flavor, and he rarely compliments me on anything. 🙄 I used fresh broccoli and added quite a bit more cheese than the recipe called for. I also added salt and pepper. Otherwise I followed the recipe. I expect to add this recipe into my monthly rotation.
Debbie S says
D-Doubleicious! I cut it in half, used pace salsa instead of rotel. Used frozen broccoli while coking rice and then 5 minutes before done added about 2 cups of fresh broccoli. Colby jack cheese on top. Really flavorful! Thank you for a really good recipe!
Jaren says
Thank you Debbie!
