Most people have their “go-to” dishes they like to bring to parties, etc. Well this is one of mine. I like the fact that they are a good “make-ahead” item, and that usually prompts me to make them, not to mention they are just plain good! I like to make them the night before and cut them up before serving the next day.
They are also great to add what you like or take out what you don’t like. Most importantly, they always get eaten quickly!
Recipe:
2 8 oz. blocks cream cheese
1 packet Hidden Valley Ranch mix
2-3 green onions, chopped finely
1 can green chilies
1/2 can chopped black olives
1 small jar diced pimento (found either with the pickles and olives or with canned vegetables)
4 burrito-size tortillas
Mix first three ingredients and divide/spread over the four tortillas. Sprinkle on green chilies, olives, and pimento. Roll tightly and chill for at least 2 hours or overnight. Cut in 1 inch sections and discard ends. Makes about 2 1/2 dozen.
