I absolutely love Saturday morning breakfasts! There is just something relaxing about starting the weekend off with a yummy breakfast I’ve been wanting to try. If we don’t have a jam-packed to-do list, you better believe I will be making a new breakfast treat! These Cinnamon Swirl Sheet Pan Pancakes just moved to the top of my list!
We loved them! They start off with a simple homemade batter that has all the good stuff like a little sugar and a little melted butter and some baking powder. To me, these are the secrets to a great pancake. Then you just mix the cinnamon sugar mixture and swirl it around. My mouth is literally watering as I type this! Time to make these sheet pan pancakes again soon!
How do you make Cinnamon Swirl Sheet Pan Pancakes?
- Combine the batter ingredients.
- Pour into a pan greased with melted butter.
- Drop cinnamon-sugar mixture dollops into batter and swirl.
- After baking, top with an easy homemade icing.
- Slice and serve!
- I use this half sheet pan! I love this set! I’ve had them forever!
Notes for this recipe:
- These would be perfect for a birthday party since you can slice them up into squares easily.
- They would also be great if you had family visiting. Throw in some bacon, and you have yourself a yummy breakfast!
- These are also great with a little syrup on top too! Why not!
- I like to use a half sheet pan for this recipe! If you use something smaller, pancakes will be thicker, and you may have to increase baking time.

Cinnamon Swirl Sheet Pan Pancakes
Making a big pan of pancakes to feed a crowd can be super easy and delicious especially swirled with a cinnamon sugar mixture and topped with a yummy glaze!
Ingredients
Pancakes:
- 2 3/4 cups all purpose flour
- 3 1/2 Tbsp baking powder
- 2 Tbsp granulated sugar
- 2 eggs
- 1/2 tsp salt
- 2 1/2 cups milk
- 1 stick butter, melted
Cinnamon Swirl Mixture:
- 5 Tbsp butter, melted
- 1/3 cup granulated sugar
- 3 Tbsp brown sugar
- 1 1/2 tsp cinnamon
Icing:
- 3 Tbsp butter, melted
- 1 1/2 cups powdered sugar
- 2 Tbsp milk
Instructions
- Preheat oven to 325 degrees.
- In a large bowl, mix toghether flour, baking powder, granulated sugar, eggs, salt, milk, and half of the melted butter.
- Pour the other half of the melted butter into a half sheet pan. Spread it around the bottom of the pan with a pastry brush. Pour the pancake batter into the pan.
- In a small bowl, make the cinnamon sugar mixture by mixing the melted butter, sugars, and cinnamon. Spoon dollops over pancake batter. Use a butter knife and swirl the cinnamon sugar mixture all over into the pancake batter.
- Bake for 15 minutes.
- While it bakes, make the homemade icing by mixing melted butter with powdered sugar and milk.
- Once you remove the pancake from the oven, drizzle with icing. Slice into squares and serve.

My whole family loves this recipe. I did add fresh cut pineapple for an “upside down” type of flavor and I made a cream cheese glaze. The directions are super easy to follow. I just wish it stated what size pan to use, unless I missed that somewhere. I just guessed and my cakes were a bit thicker (which is fine!) My kids asked if we could have this again tomorrow lol.

This is so demand easy!! I left out about 1/4 cup of flour and added in a scoop of salted caramel protein powder. I added in a smidge more of milk because of this, and it was PERFECT. These pancakes are so fluffy!
