- First, it simply involves sautéing diced chicken and onions.
- Then, you add the canned beans with sauce, taco seasoning, and chicken broth letting it simmer away for a little bit.
- Last you add in some cheese! It’s so easy!

Easy Chicken, Bean, and Cheese Soup
Easy Chicken, Bean, and Cheese Soup - A cozy soup recipe filled with chicken, chili beans, taco seasoning, and broth. It's an easy and comforting idea for your next dinner!
Ingredients
- 1 tbsp olive oil
- 1.5 lbs boneless chicken breasts, cut into 1 inch pieces
- 1-2 tsp creole seasoning
- 1 onion, chopped
- 2 15 oz cans white chili beans (in mild chili sauce)
- 1 15 oz can red chili beans (in medium chili sauce)
- 1 taco seasoning packet
- 32 oz low-sodium chicken broth
- 8 oz colby jack cheese, shredded
- fresh chopped cilantro
- Optional: tortilla chips
Instructions
- Add olive oil to a pot and heat over medium high heat. Add chicken breasts and season with 1 to 2 tsp creole seasoning.
- Cook for 8 minutes, stirring occassionally, and then add chopped onion. Cook and stir occassionally for another 8 minutes.
- Add cans of beans (undrained) and stir.
- Add taco seasoning packet and stir.
- Add chicken broth, stir, and bring to a low boil. Reduce heat to medium and let simmer for about 20 minutes.
- Stir in 1 cup of shredded cheese and simmer for about 5 minutes.
- Serve with more shredded cheese and fresh cilantro on top. Throw in some tortilla chips if you'd like as well!
