Fried chicken sandwiches are all the rage lately, and they are super easy to make at home! These easy Cajun Fried Chicken Sandwiches are paired with a quick cajun sauce that we make all the time down here in Louisiana!
What do you need to make these Cajun Fried Chicken Sandwiches?
It’s only a few things needed! That’s why I love making these. Plus, the kids eat them up really well!
- thin-cut boneless skinless chicken breasts
- creole seasoning
- all-purpose flour
- baking powder
- vegetable oil
- brioche buns
- bread and butter pickle slices
- mayonnaise
- ketchup
The key to frying up these chicken sandwiches quickly and making them tender is pounding the chicken out. This is easily done with a meat mallet, but you can use a heavy skillet if that’s all you have. Do this between two sheets of plastic wrap before seasoning the meat. I promise, this step is not hard!!

Easy Cajun Fried Chicken Sandwiches
Ingredients
- 6 thin-cut boneless skinless chicken breasts
- 3 tsp creole seasoning, divided
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1 cup vegetable oil
- 8 brioche buns
- bread and butter pickle slices
Cajun Sauce:
- 4 tbsp mayonnaise
- 2 tbsp ketchup
- 1 tsp Tony Chachere's creole seasoning
Instructions
- Place a sheet of plastic wrap onto a cutting board. Place chicken breasts on top and then cover with another sheet of plastic. Use a meat mallet or heavy skillet to pound out chicken breasts until thin. Remove plastic wrap and cut each piece in two for the large pieces. Using 2 tsp of creole seasoning, season each side of the chicken breasts with seasoning.
- In a shallow dish, mix flour, baking powder, and 1 tsp creole seasoning.
- Dredge chicken in flour coating both sides.
- Heat oil in large skillet over medium high heat.
- Place chicken in hot oil and cook for about 5 minutes per side and golden brown.
- For sauce, mix mayo, ketchup, and creole seasoning.
- Slice brioche buns in half and place under broiler for 2-3 minutes.
- Spread cajun sauce onto buns. Top with chicken and pickle slices. Serve warm.
