This is a great cookie recipe, especially when you have little ones that want to help you bake. They are really easy and gives them plenty of opportunities to add in ingredients. We made some for our vacation road trip this past summer and everyone really enjoyed them!

1 cup shortening
1 cup sugar
1 cup packed brown sugar
2 eggs
1 tsp vanilla
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 cups quick-cooking oats
2 cups crisp rice cereal
1 cup flaked coconut
In a large bowl, cream the shortening and sugars until light and fluffy. Beat in eggs and vanilla. In a separate bowl, combine the flour, baking soda, baking powder, and salt. Gradually add this to the creamed mixture and mix well. Stir in the oats, cereal, and coconut. Drop by rounded teaspoonfuls 2 in. apart onto ungreased cookie sheets. Bake at 350 degrees for 7-9 minutes. Cool on wire rack. Enjoy!
